Ensure that even though the address they are typing in in correct, that the address in the header they get returned in correct.
There is a bug related to mailto links in Office 2007/10 that will change the email address that you put into the field. Works kind of like this:
bob@abc.com is sending an email to Jeff Smith,
jeff@xyz.net. Bob's outlook has this bug, and when he sends an email to
jeff@xyz.net, it changes the address to <Jeff's Display name>@abc.com, so
JeffSmith@abc.com. It can even propagate that change up to the contact in Exchange, if one exists.
