Aurra Singh (sp?) showed up for 2 seconds in Phantom Menace but she has become a fairly cool character.
A movie showing the transition of clone troopers and Republic officers to the New Order could be a dynamite concept.
You could make a very dark movie about the crushing of Naboo and the start of the Rebellion if you wanted to as well.
I'm still a fan of the idea of an old republic movie too.

I actually really liked the Republic/Imperial Commando novels. Movies centering around Delta/Omega squad would be cool.
Actually, they could also make a movie based on the Force Unleashed. They've already got the actor to play Starkiller and it was pretty interesting.
