My fiancé and I have one driveway (naturally) which holds two cars.

What have you done to combat the cars being boxed in? She prefers to drive he car and I prefer to drive mine. Any simple solution other than getting out and moving the cars every night/morning?

It's hard to give a serious answer without more details such as whether using some of your lawn is possible, or if your house and your fence make that impossible. If it only holds two cars, then it's not very long, so that means the street is right there. Get her to park on the street when she gets home, then pull her car in after yours when you get home with the spare key. Nobody goes outside after they're inside, and both cars are on your property at night.
Or you could get a motorcycle and drive around her in the driveway.
Or she could start having an affair and leave before you and get home after you.
Or you could pave a big arc shaped driveway on your front lawn.
