Most places that have independent living apartments also have the option of those residents taking their meals in the residence dining room.
A kitchenette is nice because it allows the person to make their own breakfast cereal/toast/coffee at the time they chose in the morning and also gives them the ability to make a late nite snack too. When you just live in a 1 room unit you always have to leave it in order to eat, in most cases... not unlike living in a hotel room without a kitchenette.
