What I do with my shaw box and DVD recorder (should be the same).

Run coax into your reciever, then run AV or S-video from your reciever to your VCR, then connect your VCR which ever way you wish to your TV (coax or AV or S -video). To watch your Satellite on your TV continue to run your HDMI from the reciever to the TV.

You obviously wont be able to record true HD on your VCR nor will it be able to see a 1080i or 720i (p) signal.
