Seems different here in Calgary than US cities Ive travelled to. In the US, food trucks always meant cheap food with a local flavour. In Calgary, food trucks have been a nice alternative to the typical food you get in a downtown food court.

Expand further. Would combos help increase value? Say 6" sub, chips and drink $10? Or does it not matter. What entails quality. Do you care about local/organic or is it mostly based on portion size.
c) Smaller portion for $5 (ie. 6" sub) or meal size for $8 (ie. 12" sub)? The mind set would be to give variety and try multiple items vs. a couple.Not sure what your question is. But Id say when trying a new food truck it is nice to have the option of smaller portions at a lower price or a sampler type item.
What I meant was most trucks offer one size for x amount. Why not take a page from the US trucks in that they give a smaller portion but for a reduced cost. This allows the customer to try 2 flavors for say the same price as one larger item. (ie. 1 12" tuna sub for $10 vs. 1 6" meatball & 6" tuna for $10 or $5 each).
