Heat a soup pot over medium/medium-high heat.
Wait for the pan to come to temperature, add about 1 tablespoon of olive oil. When the kitchen smells like olive oil, add 2 teaspoons of whole cumin seeds and let them sizzle in the oil for a minute or two, they'll turn darker when they're ready.
Add one white or yellow onion, chopped, and sweat that baby until it's barely browning. Once, the onion has a bit of colour on it, add a chopped up head of cauliflower to the pot. Once you've added the cauliflower, I generally add a bit of paprika and a load of fine black pepper. Add some salt, let the cauliflower soften a bit and then add two cups of milk and two cups of water or vegetable stock (I almost always just add water, not bothering with the stock).
Bring it to a boil, then let it simmer on the stove for 20-30 minutes. Puree it with a hand blender, bob's your uncle.
