I would start printing up invoices for the food, as well as your time spent shopping and/or cooking. (Make sure the amount you charge for labour is reasonable.) Start presenting him with those invoices, and get him to sign them.

Really, you have two choices; either one of you leaves, or he has to become accountable. At least with this documentation if you are forced to break your lease and he tries to go after you for the rent he's out; you can show that you had a good reason to leave.
