I posted earlier in the thread, but I was having similar issues with hitting. What I discovered is that the hitting sliders are reveresed from what you would think they are. You would think that when you're increasing the human slider to the right that you're increasing the hitting power. What you're actually doing is making human players easier to hit. Same with the CPU slider.
Move the human slider left (harder to hit) and the CPU slider right (easier to hit) and a large part of your problem should go away. Worked for me. I actually had to back off a bit because I was destroying the CPU in hits (allstar, offline).
