Don't go to Jackson. Scary city. Empty streets downtown at 4:30 in the afternoon. Got honked at by the (rare) other cars. Probably not a good sign.
My top recommendation in Mississippi is Oxford. Unfortunately it's a whole lot closer to Memphis than New Orleans. Great town, home of Ole Miss.
As for the gulf, Biloxi (pronounced Buh-lux-ee btw, which was a surprise to me) is good if you're into gambling. Mobile was nice, reminded me some of Victoria actually. Best part of the gulf though (outside of nola), IMO, is Pensacola. Fun town, nice beaches, cheap everything.
As for little towns, I enjoyed Bay St. Louis, MS. It was devastated by Katrina, but the town has come back. You can really tell there's a sense of community pride. Nothing special to see, but I thought it was a fun small town. We went to a nice restaurant on the gulf right by the bridge to Pass Christian (I think it was called trapani's).
