Because it's smaller, reversible, and adaptable to future technologies.
The bottleneck for read/write speeds on phones are the internals and the limits of mobile flash memory right now, not the connection interface. Introducing USB 3.0 for this iteration of the iPhone 5 just for the sake of it would've been a waste of time and money. It'd be like worrying about how your ethernet speeds affect your internet usage when you have a dialup connection.
