I hate email signatures. I need your contact info exactly once, and then it's synced to all my devices.
They make emails bigger, they have horribly inconsistent presentation in client email apps (as others have noted), and they absolutely pollute threads when trying to unravel a complicated discussion.
Bah humbug
But if you've got to do it, I think the suggestion of text only in a web safe font is a great one.
