I lived in Chicago for 7 years, I can assure you that what they refer to as "Chicago style deep dish pizza" here in Canada, is absolutely nothing like authentic Chicago Deep Dish Pizza in Chicago. Here in Canada they are under the impression that if it has a thick and deep crust, then it's Chicago Deep Dish Pizza. Not true at all. It all starts with the dough, and the dough for authentic deep dish pizza is not even close to what they use here. Taste and texture is night and day different to the authentic pizza. I cant even swallow the crap they sell here. It's disgusting. If you want to know what real Chicago Deep Dish Pizza is like, go to Chicago and try Uno's, Lou Malnati's, or Giordanos
