She is the one negative variable that Walt has no control over and as such, she can ruin the fun at any moment. The show needs that mystery and tension I think. It can't all be cops and robbers.

It also adds a nice element of irony to the show. Walt claims everything he's doing is for his family, but his family is horrified by what he's doing. It helps drive home the point that Walt is simply engaging in diluted rationalization and he's primarily motivated by his own ego.
