Depending on the quality of cheese, yes, it does. Like with most things, quality of ingredients is the key. I've had many Neapolitan pizzas where you know the sauce comes from a tin, the basil is dried and the cheese is not mozzarella of any type. This, can and does, invariably affect the final product.
