Better grips actually have a little allen bolt that you loosen and they slide right off. And many brake levers have a 2 piece body so you can pull them right off. I just did this the other week as I like my brake levers inboard of my shifters.

You just have bad luck Use an air compressor or some lube for those types of grips next time.
