I wouldn't say we're at the saturation point, but we are past the early adapters stage now and into the "me too" stage.
Not speaking to Jelly Modern specifically but I'm starting to see a few trucks (Shawarma YYC comes to mind) that appear to be nothing more than attempts to hop on a trend.
"People like buying from trucks now, I'll get a truck and sell food, I'll even include that twitter thing everyone is into."
It seemed like the first wave (Ally Burger, Perogy Boyz, Los Compadres etc) were all trying to offer something unique, something that you can't get in every neighbourhood of the city. Where as now it seems like hopping on the trend is a bigger priority than the food itself.
But I suspect it'll reach an equilibrium stage where the better trucks survive and we reach a happy point in a few years. 15 months ago we didn't have a single food trucks, so it's still a very young industry in this city.
