Don't have any experience with this, but from a nutritional standpoint, I'd imagine the hardest thing to get enough of would be protein.

I'd invest in a large tub of weigh protein. Make fruit smoothies with it. Makes sure he gets a couple of scoops of protein a day at a minimum. The other challenge will be ensuring he gets enough calories. There's always milk shakes for that.
