When I was a server i would make decisions early on about which tables I liked and which ones i didnt. See if you are at a restaurant where you have a lot of tables (baically these mid level chains) you dont really have time to give perfect service to every table.
So demanding tables get poor service because in general the more demanding a table is the less of a tip you get from them. So you work the tables you like and you work the tables you expect good tips from. Anyone difficult with lots of requests gets the minimum service required.
So when you are missing sides of ranch, get properly cooked bacon, or one of your modifications gets missed its not because the server is stupid or lazy or doesnt want your money. Its that they have read you like a book from the moment you asked for the 4 sides of ranch. Servers do try to maximize their profit over an entire shift and minimize the grief they take from tables.
Your idea that the Servers want your monet is wrong. What they want is for you to leave quickly so some other reasonable customer will fill your seat.
