Anything by John Douglas. He's the person who invented criminal "profiling" and is the one who was directly used to base the character of Jack Crawford, from the Silence of the Lambs.
Some of his best books are Journey into Darkness, Anatomy of Motive, Obsession and Mind Hunter.
Robert Ressler is also a former FBI profiler who has a few great books including Whoever Fights Monsters and I have Lived in the Monster.
Signature Killers, by Robert D. Keppel is a decent read, as is Hunting Humans, by Elliot Layton.
