Monks were previously good on Inferno because they were using an exploit that made them (and their entire party) nearly permenantly invulnerable.
There was a Monk ability that, when activated, provided everyone in the group with a shield that absorbed damage equal to 15% of their maximum health. It had no cooldown, so you were only limited by your ability to regenerate spirit. Combine this ability with a set of gear with high HP and spec your character for ultra-fast spirit regen, and your entire group was effectively invincible. This was nerfed in a hotfix yesterday, and the ability will be redesigned to provide a benefit that isn't quite so overpowered.
I'm on Act II of Hell difficulty right now, and I've recently specced and geared my Monk in such a way that survivability is much less of a problem now. I'm not using the highest dps build, but I have the following benefits:
~50% dodge
~55% damage reduction from armour
~45% resistance to all forms of damage
On top of that, my primary attack reduce enemy attack speed and damage by 20%.
