With reguards to dual wielding as a monk. I've been reading a fair bit on the diablo 3 forums on this subject.
From what I can gather the main advantage is the ability to regen spirit faster while dual wielding as well as being able to have extra stats with the second weapon. Dual weilds = more attacks = faster spirit regen when using skills.
In order for dual wield to be worth it they say that you have to have weapons with relatively the same DPS. If they are not within 15% dps of each other then they will be less dps then an equivelant staff. Something to do with a 15% attack speed bonus. I think its the attack speed bonus of the offhand or of the 2h i forget just going off the top of my head.
For example: A 30dps staff is doing more dps then a 30dps main hand and a 25dps offhand is how I believe it to work.
Seems like any weapon that has a dmg modifier is pretty desirable. Like if a weapon adds 1-3 per hit it bumps the dps by quite a bit and that is another advantage to dual wielding as you can have two weaps with the same kind of modifier.
I don't have problems with spirit regen, and I have a rare quality staff with some decent stats right now so i'm using the staff. I've been switching back and forth between both styles totally depending on the weapons I have. I prefer the look of the staff so I tend to prefer to have them equipped if all things are equal.
I also believe the high end weapons for monks are of the 2h variety.
This is just what i've interpreted from reading on the forums. My monk is 29 now and i'm having a blast.
