My favorite has to be the Law and Order one, I've already watched it 5 times. I laugh at all the jokes every time still.
A close second would be Documentary Filmaking Redux (S.3, E.8) where the Dean makes the commercial. That was my favorite until the L&O one. The show gets better with every season, so Season 4 is going to blow my socks off.
My third favorite would be Pillows and Blankets (S.3, E. 14), the Civil War style documentary.
