Man, I'm spilling all my bachelor recipes I've picked up over the years . . .
Tabbouleh. One of the few salads that are edible.
Buy a #### load of parsley, some mint, some couscous (I've tried it with quinoa, but it's not the same) a cucumber, tomato, some garlic and a lemon. Maybe some pita.
Chop up all the veggies/herbs.
Boil couscous for a few minutes or whoever long it takes. Add that.
Splash with all the juice from the lemon, add bit of salt. Serve in mini pita breads.
