Is it an avi file? If so, can the 360 play .divx files?

I have a PS3, so I'm not sure about the 360. But to get this to work on the ps3, I put the subtitles and the avi into a .divx container. Since a divx container can contain both, you don't need to re-encode the video and it only takes about 3-4 minutes. From there, the PS3 will recognize the subtitles as a subtitle track and you can switch them on and off as usual.

You'll need some software to do this. There are a few different options out there. Some googling should help you find one that suits your needs.
