I think Stephen King's The Stand is the only post-apocalyptic scenario where the characters actually realized they could ride bikes, and they eventually become the primary mode of transportation (as they logically would). But they look dopey on camera and there's probably a lot of administrative nonsense involved with putting actors on bikes, so it never happens ever.
My ebike is primed and ready. It'll get me too the mountains to my fall back rereat. Then I just take the wheel off and rig it up into a wind generator.
