I suppose a lot depends on how quickly the appocolypse happened. If it was fast; as suggested by the abandoned cars along the freeway, you would think gas stations would still have gas in the tanks. Even if the stations "ran out" of gas, the tanks shut off with several hundred litres left in them. It could be pumped out.
And then I wouldn't be too concerned about fuel economy in the long run. I would think that the gas would go stale long before you ran out.
Edit- and to add to Ben's picture; there is quite a difference between hitting another full sized truck, and hitting a zombie.

I think we've mentioned it before, but while they were at the CDC, I couldn't help but notice a wide range of Humvees around.
That would be the vehicle I would go with. Diesel powered, light on 'dangly bits' like heated seats etc. heavy on important things like independent suspension, run flat tires, ground clearance, impact resistant windows and weapon mountability.
Frankly, in a zombie apocalypse, I'd venture much of my time would be spent trying to find a better vehicle, and a better gun, and for that type of scenario, nothing better than an M1114.
