The best books of the EU are the old republic books, the Bane series, and the books that take place during the rise of Palpatine. The Dark Lord trilogy which chronical the fall and rise of Vader over three books including Revenge of the Sith still stand as the best written series of the EU with the Bane books as a close second.
However the recent Dath Plageous book that was just released was excellent.
I have a lot of trouble reading the Yuuzghan (sp) and Legacy of the Force series.

Hm, I may have to look more into this. My foray into the EU was pretty much the three Thrawn books. I've been thinking about picking up some new reading material of late, and have a bit of extra throw-around money. May look at some of what you've mentioned here.
