Basically it's a big boiling pot of water with some spices and stuff and in it like soup. You take raw ingredients including vegetables, thinly sliced meat, fish balls etc. and put them in the pot to quickly boil them. Then you take the stuff out, dip it in a sauce that you like and eat it.
Hot pot is so simple, but awesome. I eat hot pot once or twice a week in the winter here. It's delicious, social, healthy and you can take as long as you want to have dinner.

Edit: To add, the pot is kept hot and boiling throughout the meal with a range built into the table or hot coals.
