This is coming from a Jets/Longhorn fan who has hated him in both college and the NFL. He revolutionized his position. How many teams now look for small, quick guys to fill the slot? Pretty much all of them.
Revolutionized the position is really an exaggeration.
Teams still scout for big guys. You say pretty much all of them look for little guys? I can't even name 10 small receivers in the league. How are Anthony Gonzalez, Steve Smith (Giants) and even Welker doing? ok but meh.. nothing special. I think the small RB is more of a trend now. Guys like Sproles, Best, Bush etc...

Gimme the tall receiver every time....

Megatron!
Marques Coltson
Larry Fitzgerald
Andre Johnson
Dez Bryant
Sydney Rice
Plaxico Burress (needs a QB to throw properly to him though)

Those are the guys that make the big plays and go get balls no receiver can get. Little guys are speedy but they need perfectly thrown balls.
I woudn't draft a receiver under 6-1.
