Banks have warehouses full of documents, carefully organized so they can eventually find something specific if called upon, and more lately, they scan them into a digital, searchable format so they're available at the branch level without a paid person having to do a physical search in a warehouse.

Even if they had transfered the documents to the bank of Canada, I'm pretty sure that they would keep photocopies of the document.
I'm also pretty sure that the Judge would have accepted any debt statement and transaction law as proof of debt.
