I use OneNote all the time at work. It basically replaces sticky notes on my desk for me. I love that I can type/draw on it where ever I want unlike word, and I can tag information to organize things I put on it. For example, I can put some stuff in, then tag it as an Outlook task/meeting request/etc so it will remind me to resolve it later.
The copy and pasting options are pretty impressive. I can grab info from a webpage, and it links that text/picture/data back to the webpage if I need to go back to it. I can drag stuff out of OneNote and use it in other programs too.
I don't think the program's uses are very obvious unless you try it out for a while. Give it a shot and if it isn't for you, then just ignore it. I don't see any reason to delete it though.
