Try booking the open jaw on the website of whatever airline you're looking at (Qantas, United, etc). If the city you're looking to go to doesn't have transpacific service (ie Cairns), a one way tacked onto a return may be your best bet.
Also, I'd consider whether Australia is a must do for this trip. There are some decent deals to southeast asia, whereas australia is super expensive right now due to the overflow from the Qantas work stoppage. Plus the Australia currency is really high right now compared to the past because they're digging up the country and selling it to the Chinese.
It's a great country, and I loved it when I went (definitely tack on Melbourne if it's not in your plans already) but from a value perspective this might not be the time to book a trip there. (I paid <1000 for a YYC-Syd//Mel-YYC less than 2 years ago)
