I don't think you can sign a contract relinquishing your rights, especially when safety is a concern. If you really want to take away an employees rights you need make them an owner of the company. Toss them a single share and most of their labour rights go out the window.

The limit on hours worked in a day is written as:
An employee may work a maximum of 12 hours in a day unless an unforeseeable or unpreventable emergency occurs
I think some people are more liberal with what is unforeseeable or unpreventable. Production gets pretty atrocious after 12 hours though so I don't think it is worth it for anyone.
