Before you start playing either Skyrim or Oblivion, the one odd quirk you should familiarize yourself with is the is the leveling system. I'm not sure how much they'll change it between Skyrim and Oblivion, but it'd probably be worth familiarizing yourself with the Oblivion system before playing either game. If you don't take advantage of the easy +5 attribute modifiers early in the game, the end of the game can get pretty hard.

That wiki in general is very thorough and in-depth, and is a great resource, and I'd recommend consulting it often, particularly if you're new to Elder Scrolls.
