I appealed to CP a couple years ago for the same thing, you may find some helpful tips in here. As already mentioned, Cheese was a big help, among others.

I took Cheese's advice and stayed at the Sandals Royal Hicacos. I highly recommend it (especially after reading what you're looking for). Good R&R, its adults only so no rugrats running around. Good food for Cuba too, on the flight home we heard many from other hotels complaining about their hotel food, but we had no complaints about ours. Sounds like you're really in it for a good beach too, one night we took a walk past about 7-8 different resorts and we had the best beach BY FAR.
