On the Earls/Joeys thing. It is absolutely based off of looks.
Several times when working there girls would come in and leave their resume with me at the bar to give to my manager. He would ask me my opinion of the girls, with the implication being, if shes not 8-10 shes not getting hired. So if your service sucks at Earls/Joeys, it is likely because hiring is not based off of brains, but at least you get something nice to look at while you wait for your chili chicken.
Stopped by Stephen Ave. Earls this week for lunch, and to be honest I wasn't overly impressed. There were good looking girls don't get me wrong, but nothing mind boggling.
