I've always followed the advice of "drink as much as your boss, and you'll be safe". A couple years ago that was a TON. This year, my new boss wasn't quite as hard on the booze, so it was a calmer night for sure.
I must work for a boring company because there's no crazy afterparties or debauchery to be heard of.
