That's a tough one...if it is cured or smoked, that might make a difference. I'd give it the old smell test and if it passes, cook all of the bacon...I don't think I'd put it in the fridge.

That being said, I have cooked bacon from the fridge that was beginning to smell rancid, and it was fine.
