I think one big change that needs to be made is to open the polls at 7am, which would give a lot of people a chance to vote on their way to work, rather than a mad rush after work.
At 4:00 yesterday, approximately 140,000 people had voted. The final numbers were over 330,000. That means that significantly more people voted in the final 4 hours that the polls were open than in the first 6 hours.
I don't know if there's anything that can be done about the ages of the volunteers since they're volunteers. You can't expect people to take a day off work to volunteer at the polling stations, so you're going to end up with mostly retirees.
