I second what Troutman says. That ValleyHo hotel is awesome, and their restaurant does good breakfast, too!
In Phoenix, my favourite Mexican food ever is at a place called Carolina's. (there's a couple locations around town.) It's fast food, but it has nice, fluffy tortillas, flavorful guacamole and very reasonable prices.
