I will vouch for the Riu chain as well.

We got married at the Riu Vallarta in Nov. 2008, and went to the Riu Cancun for our 1 year anniversary last year. They were both fantastic, and we'd go back to a Riu in a heartbeat. We actually talked about it last night...
