unfortunately i find it hard as well, but those fruit bars are worth bars are worth 2 or 3 servings of fruit / vegetables a day are a fast fix in a tight crunch,
Also when making stews / or sauces, i'll chop up spinach and throw that in, can't even tell it's there.
If I'm using a can of tomato sauce (cut out cream sauces too, the tomato sauce itself, can count as a serving) with pasta, instead of just the sauce, i'll saute diced carrots, peppers, oninons (whatevers on hand) to give it some more.
