I hear ya. I made a fantastic veggie lasagna a while ago but it had like a dozen ingredients and took forever. That was a one-off.
Easy salad:
Romaine lettuce (from the hearts is the best)
Tuna chunks
Canned corn
Mix, and enjoy. For such a simple recipe it's pretty tasty.
