If we really get that many players, we can still fit them in, so long as people sub out at the right time, and not hog the ice time.
I used to play in this other casual game gym, and when we had that many people show up, we'd time about 3 minutes, and then the next stoppage in play, i.e. when the ball went out of bounds or the goalie grabbed it, somone on the bench would say 'line change' and all the players on both teams would change. People would wait a maximum of 6 minutes in between shifts, and it kept everyone fresh.
Yeah, occasionally, there'd be end to end action with no stoppages for a few minutes, but usually when that happened, players were tired enough to sub on the fly.
