A buffer solution is a mixture of a weak acid/conjugate base or weak base/conjugate acid and, through somewhat complicated chemistry, allows the solution to take in a lot of acid or base with minimal changes to the pH of the system.
The human body is essentially a macroscale buffer system and is specifically designed to accommodate ingestion of any food source without significantly changing the chemistry of the body.
