You can download a 10-day full functioning demo of Amplitube 3 from IK Multimedia's website. I actually used it for tracking someone's demo and we got er done before the demo ran out! Then you pay for your liscence code and enter it and keep going.

I haven't tried Amplitube 3, maybe I'll look at the trial and give it a shot.
Don't get me wrong, the ones I tried were awesome to play around with but there was always something missing and I couldn't imagine using them in place of actual good gear. They're pretty cool tools to get a wide palette of sounds in one box, but to my ears they never really came close to the real deal. I'll have to try out the newest version to see for myself.
That said, this technology if properly done, could be a real boon for home and small scale recording because they can allow a pretty professional sound on a budget. I think we're going to see some exciting stuff over the coming years in this area as technology improves. High quality samples (piano, organ, string) have already gotten phenomenally good in the past few years and I expect modeling software will do the same in the future.
