The camera technology can detect an unlimited number of people, so if it's programmed in such a way, it can process and render more than two-players at a time. At the current time, Microsoft hasn't revealed how many players Kinect will support, but last year they did mention it could and would allow for 4-player gaming. PrimeSense did state that they do not know how many players Microsoft currently has Kinect setup to handle. With Kinect and the PrimeSense demonstration two completely separate entities, but the camera itself can detect a limitless number of people and if the software is designed to do so, process them all. So, in theory, if Microsoft developed the software of Kinect to process 4-8 players, it could feasible do so.

i guess only time will tell.
Wherever you got that quote from is completely forgetting that last year Kinect was supposed to have it's own processing hardware, but now it just uses the 360 system to do it's processing. This means a lot less processing power. Whatever was said about Kinect last year isn't relevant anymore as there's been so many major changes to it.

Here's the telling quote:
"PrimeSense reps also told me that the camera can "see" any number of people on the screen -- you can fit as many people in that camera as possible, and the computer will see all of them and can even recognize them as human shapes. But it can only run calculations on two people at a time, just because the processing power required to track all of the body's locations and movements is so great. During our testing with the device, a person moving in front of the camera was able to "steal focus," but the computer can also be told through gestures to keep focus on a certain person."

Then there's the circumstantial evidence of the multi-platform games that are 4-player for the PS3/Wii, but are only 2-player for Kinect.

Hey, it's a free market and people can buy whatever they want, but let's not ignore the facts that Kinect has several major issues that Microsoft continues to be coy about. For a device that's supposed to release in about 4 months (how much of which is actually development time) it's quite alarming and I wouldn't be banking on it being a great product out of the box. Here's another problem for MS to fix:

"While playing the game at a recent Microsoft event, a person walked up to the table on which the television was sitting to pick up a glass. They never walked in front of the tv, staying instead to the side where I didn't even notice them. But for some reason the Kinect camera apparently spotted them and started tracking their body, forcing my car to the left and making it impossible for me to steer."
