It's really not a big deal. What you're seeing is the entrenchment of the industrialization of the video game industry.
Big revenue titles based on brand loyalty designed to maintain the corporate needs of the publishers. The games are 'good.' But they are incredibly safe. It's not a problem if you essentially like playing the same game over and over again.
As per the SR-71 how fun would it be to push the throttle down to out-run a missile? I don't think that will be in any way playable. Would be incredibly boring. "Here's your mission, fly at 70,000 feet over this reactor, take pictures and come back, only... without any heartbeat monitors!"
