Waterton is nice. The town itself is much smaller and quieter than Banff. I wouldn't budget a lot of time for the town as you'll pretty much be able to do the whole thing, including the Price of Wales hotel, in an hour or two.

If you're heading down that way, however, I'd recommend driving across the border and doing the Going to the Sun highway through Glacier National Park. Crazy views, cliffs, etc. It is a slow drive, and you just kind of meander through the mountains, so leave lots of time.

There's not much on the other side (for food and that kind of stuff), at least not right at the end of the park. When my wife and I did that drive a couple of years ago, we did it on a whim so we didn't really plan anything. In fact, our B&B was in Waterton and we needed to haul tail a bit to get back to the border in time. I believe it closes at 10 or 10:30 PM. There's probably all sorts of nice places on the US side (that Hidden Moose place that others have suggested sounds awesome) to avoid having to turn around and come back right away.

A kind Montana Highway Patrol officer actually let me off of the hook for going a wee bit fast, as he also knew about the border crossing. Made it back with about 15 minutes to spare.
